Insect Oil as a Source of Nutraceuticals: New Approaches in the Food and Feed Industry

Abstract
The production and consumption of edible insects are growing in developed countries, due to nutritional, environmental, and economic reasons. The main use of edible insects is as an ingredient, in form of powder, in preparing processed products. Other uses are the integration in animal feed (e.g., insect oil, insect paste), or for fertilization in the form of “frass.” Nonetheless, edible insects are an integral part of the diet of many developing countries and have been a fundamental nutritional and economical source to ensure the food security and the economy of many of these populations, as in the historical case of Thailand. This chapter aims to collect the success stories, opportunities, and also risks associated with the breeding of edible insects to improve food security in rural areas of emerging countries.
